There’s something magical about the combination of coconut, lemon, and lime — bright, refreshing, and a little bit like sunshine you can eat. These Coconut Lemon Lime Cookies bring together the zesty tang of citrus and the sweet chewiness of coconut for a cookie that’s both comforting and irresistibly fresh.

I first made these on a cool evening after rewatching Peter Pan for the umpteenth time. These were inspired, specifically, by Tinker Bell. I felt like something light and cheerful was fitting of her. I used the concept of basic sugar cookies to make this recipe. The kitchen filled with the scent of lemon zest and shredded coconut — and just like that, these cookies were born. Each bite of these cookies tastes like a mini tropical getaway!

Ingredients and Tips

Flour- For this recipe, all purpose flour is enough as it will allow the cookies to stay soft. Since these are cookies, bread flour would be inappropriate as the higher protein content would result in a tougher cookie. Gluten production is not particularly important to this kind of recipe.
Butter- For cookies, I always recommend using a good quality butter. However, you should use what you have. A store-brand will still yield good cookies.
Salt- Salt brings out the flavor of sweets.
Lemon/Lime- Lemon and Lime zest are this stars of this recipe. The citrus zest is what gives the cookies the bright scent and taste.
Sweetened Shredded Coconut- Coconut provides subtle flavor, a bit extra sweetness, and a nice texture to the cookies.
How to make Coconut Lemon Lime Pixies

1. In a large bowl, blend butter, sugar, eggs, and lemon zest.



2. To a medium bowl, add your flour, lime zest, baking powder, salt, coconut, and mix. Add your dry ingredients to your wet ingredients. Blend until dough forms.



3. Chill in refrigerator until firm enough to handle. Form balls of dough about 1 tbsp each. Roll in powdered sugar.



4. Bake on 300°F for 15-18 mins until edges and center is set.
Serving Ideas
These cookies are perfect with a cup of tea, a tall glass of lemonade, or even crumbled over coconut ice cream. For a fun twist, sandwich two cookies together with a bit of lime curd or coconut frosting.
