These cookies were inspired by Tinker Bell from Peter Pan. They have a very nice bright citrus flavor. Perfect for a spring or a high tea party.

Ingredients
  

  • ¼ cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp lemon zest
  • 1 ½ cups flour
  • 2 tsp baking powder
  • 1 tsp lime zest
  • ½ tsp salt
  • 1 cup coconut sweetened coconut flakes
  • powdered sugar for dusting

Instructions
 

  • Preheat oven to 300 F.
  • In a large bowl, blend butter, sugar, eggs, and lemon zest.
  • To a medium bowl, add your flour, lime zest, baking powder, salt, coconut, and mix. Add dry ingredients to wet ingredients. Blend until dough forms.
  • Chill in refrigerator until firm enough to handle. About 30mins.
  • Form balls of dough about 1 tbsp each. Roll in powdered sugar.
  • Bake for 15-18 mins until edges and center is set.
