Roasted Sweet Potatoes
Equipment
Ingredients
- 4 lbs sweet potatoes peeled and cubed
- 1 large Red Onion cut into half rings
- 3 tbsp olive oil
- 1 tsp salt to taste
- 1 tsp black pepper
- 1 tbsp granulated sugar
- 2 tbsp Nutritional Yeast or more
Instructions
- Preheat oven to 350°F. Line cookie sheet with parchment paper.
- Add the sweet potatoes to the parchment lined cookie sheet. Do not over crowd pan. Potatoes should be in one layer.
- Add the red onions to cookies sheet.
- Drizzle with olive oil.
- Season with salt, pepper, sugar, and nutritional yeast.
- Mix the sweet potatoes to make sure they are all covered in the seasoning.
- Bake at 350°F for 30-45 minutes or until potatoes are caramelized.
