I love roasted sweet potatoes. It is amazing how a simple root vegetable can transform into caramelized, golden cubes that taste like comfort itself. These sweet potatoes make the perfect side to poultry or pork. They pair well with almost any spice profile—sweet, savory, spicy, smoky, or a mix of all four. They are packed with flavor.

Ingredients
  

  • 4 lbs sweet potatoes peeled and cubed
  • 1 large Red Onion cut into half rings
  • 3 tbsp olive oil
  • 1 tsp salt to taste
  • 1 tsp black pepper
  • 1 tbsp granulated sugar
  • 2 tbsp Nutritional Yeast or more

Instructions
 

  • Preheat oven to 350°F. Line cookie sheet with parchment paper.
  • Add the sweet potatoes to the parchment lined cookie sheet. Do not over crowd pan. Potatoes should be in one layer.
  • Add the red onions to cookies sheet.
  • Drizzle with olive oil.
  • Season with salt, pepper, sugar, and nutritional yeast.
  • Mix the sweet potatoes to make sure they are all covered in the seasoning.
  • Bake at 350°F for 30-45 minutes or until potatoes are caramelized.
  • Enjoy!!
